Zucchini Bread

A super-moist zucchini bread that was passed down through generations. It is particularly good with a cream cheese icing, or hot from the oven with Cool Whip on top. You could also stir in chocolate chips!

Ingredients

  • 1 1/2

    tsp. cinnamon

  • 1

    tsp. baking soda

  • 1/4

    tsp. baking powder

  • 1

    tsp. salt

  • 3

    cups flour

  • 3

    eggs

  • 2

    cups sugar

  • 1

    cup oil-I use canola

  • 1 1/2

    TBS. vanilla

  • 2

    cups zucchini-grated

  • 1/2

    cup nuts, chopped-optional

Directions

Stir together cinnamon, soda, baking powder, salt, and flour. Beat eggs then add sugar and oil-blend well. Add vanilla and flour mixture, mixing well. Stir in zucchini and nuts. Put into 2 9x5 loaf pans-I spray mine lightly with Pam. bake 350* for 1 hour. Cool on rack and remove from pans. Wrap tightly for 24 hours and very moist or my mom put a cream cheese icing on top- that is probably how Justin remembers it or with cool whip hot from the oven. My aunt stirs in chocolate chips.
