Zucchini Leek Soup

Ingredients

  • 2 Tablespoons oil
  • 1 onion -- diced
  • 1 leek -- sliced
  • 4 large zucchini -- peeled and cut into chunks
  • 1/2 Tablespoon chicken consommé powder
  • 1 Tablespoon onion soup mix
  • Salt and pepper

Preparation

Step 1

In a 6 quart pot, heat the oil over medium high heat. Add onion and saute until translucent.

Add leek to pot and saute 7-10 minutes.

Add zucchini and saute an additional 7-10 minutes.

Add remaining ingredients, stirring until smooth. Add cold water to cover (about 4 cups). Bring to a boil and cook 1 1/2 hours.

Using an immersion blender, blend soup.
