Peanut Butter Chicken

Preheat oven to 400 degrees

Ingredients

• 3 lbs boneless skinless chicken, thinly sliced
• 1 lb kettle roasted peanuts
• 3 eggs
• 2 c breadcrumbs
• baking spray
• 2 c crunchy peanut butter

Preparation

Step 1

Spray baking sheet with baking spray. Pluse peanuts in food processor or blender until finely ground but not powdered, place in shallow bowl. In another bowl whisk eggs. Coat chicken in egg, then peanuts. Place on baking tray. continue until all the chicken is coated. Bake 15-20 mins, until chicken is done. Heat peanut butter in microwave 1-2 mins, until warm and melted. To serve, place chicken on plate and serve with peanut butter
