Strawberry Rhubarb Soup

Ingredients

  • 1 pound rhubarb -- cut into 3 inch pieces
  • 3 cups water
  • 1/2 cup sugar
  • 1 teaspoon grated orange zest
  • 2 cups strawberries

Preparation

Step 1

Cook rhubarb, uncovered, in water with sugar and orange zest until it comes to a boil. Simmer 20 minutes and cool. Combine with strawberries and blend small amounts of the mixture in a food processor. Chill.
