Ingredients

  • 1/2 cup butter (1 stick)
  • 4 tablespoons flour
  • 1 tablespoon salt (optional)
  • 3/4 teaspoon black pepper
  • 1 quart half-and-half, divided
  • 13 ounces chopped canned green chiles
  • Shredded Cheddar cheese for garnish
  • Croutons for garnish

Preparation

Step 1

Melt butter in the top of a double boiler or a suitable pot. Add flour and stir to mix. Add salt (optional) and pepper. Pour in 3 cups of the half-and-half, stir and continue to heat.

Blend green chiles and remaining 1 cup half-and-half in blender.



When base sauce thickens, add chile mixture and stir.

Serve with garnishes.
