Ingredients

  • 1 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1 cup diced mango
  • 1/2 jalapeño seeded, minced
  • 1 garlic clove minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon minced oregano
  • 1/4 teaspoon salt
  • 12 corn tortillas
  • 3/4 pound Teleme cheese
  • 12 cilantro sprigs

Step 1

Combine tomatoes, onion, mango, jalapeño, garlic, lemon juice, oregano and salt in small bowl. Let stand 30 minutes for flavors to develop.

Heat tortillas, one at a time, on top of open gas burner, turning with tongs until tortilla is toasted on both sides, 30 seconds to 1 minute per side. Top each hot tortilla with 1 tablespoon Teleme cheese, spreading slightly. Spoon 1 tablespoon mango salsa over cheese and top with cilantro sprig.
