Banana Bread*

I grew up eating my sister’s baked goods. One of Carolyn’s specialties was (is) her Banana Bread Recipe. She is 7 years older than me, so she would get home from school earlier, and would always be baking something. It was pure heaven. I have no idea where she got this recipe from, but it’s good. It’s a nice way to use up the ripe bananas too.

This is perfect for rushed mornings, or on the go. It doesn’t need anything except a glass of milk, or cup of tea. Make it as soon as possible!

Ingredients

  • (This makes 2 loaves.)
  • 3-4 ripe bananas (4 bananas is best)
  • 2 1/2 cups flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light)
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil (I used canola)
  • 1/2 cup milk (I used skim)
  • 1 egg
  • 1 cup nuts-optional (I used walnuts)

Preparation

Step 1

Preheat oven to 350 degrees. Spray 2 loaf pans with Pam or grease them. Could use cupcake pan/papers too.
Peel 3-4 ripe bananas, and mush them up in a large bowl.
Add remaining ingredients and mix well.
Pour 1/2 into each loaf pan.
Bake for 1 hour.
Serve with peanut butter, butter, or nothing, Excellent warmed up in microwave.
