Pepper, Cucumber & Tomato Salad

Ingredients

  • Dressing:
  • 3 bell peppers, seeded and chopped
  • 1 english cucumber, chopped
  • 20 grape tomatoes, halved
  • 12 kalamata olives, chopped
  • 2 small shallots, peeled and finely minced
  • 2 garlic cloves, peeled and finely minced
  • 1/4 c lemon juice
  • 1/4 c red wine vinegar
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 2 tbsp fresh dill, finely chopped
  • 1 tsp kosher salt
  • 1/2 c extra virgin olive oil
  • 1/4 c mayo
  • 1/4 c sour cream

Preparation

Step 1

Place salad ingredients in a medium bowl and set aside. In a separate medium bowl, whisk together shallots, garlic, lemon joule, vinegar, mustard, honey, dill, oregano and salt. Slowly whisk in olive oil. Whisk in mayo and sour cream, blending well.

Add desired amount of dressing to salt and gently stir until blended. Makes 4 servings.
