Tomato Angel Hair Pasta

Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon chopped garlic, about 2 cloves
  • 2 cups tomatoes, peeled, deseeded and diced
  • 1/4 cup chicken stock, or defatted broth
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground pepper
  • 1/4 cup fresh basil leaves, thinly sliced
  • 6 ounces dry angel hair pasta, cooked according to package directions

Preparation

Step 1

1. Heat oil in a saute pan.
2. Add the garlic and cook for 20 to 30 seconds.
3. Add the tomatoes, chicken stock, salt and pepper.
4. Bring to a boil, then remove from heat.
5. Spoon the sauce over the cooked pasta and garnish with the fresh basil. Serve with crusty Italian or French bread.
