  • 1 stick unsalted butter
  • 2 cups whole milk
  • 5 eggs
  • 1/2 ts
  • 1/2 tsp salt
  • 1 3/4 cups all-purpose flour
  • nonstick cooking spray

Step 1

Mix melted butter, milk, eggs, and salt in the blender until just combined but not whipped. add the flour and blend until fully combined. Refrigerated for 10 minutes to 24 hours. Before using, consistency should be that of thick egg nog. Add milk if too thick, flour if too thin. Heat 10 inch pan on medium high. Add 1 1/4 cups batter and swirl around to coat pan on the bottom of the pan. Cook for one minute, until edges pull away from the sides of the pan. Carefully flip crepe and cook one minute.o Do the same with the remaining batter. Refrigerate leftovers.

Filling Ideas: Chocolate Hazel nut spread, fruit preserves and whipped cream cheese or whipped cream, ricotta cheese and honey and powdered sugar, sausage and egg.
