Ingredients

  • Frosting:
  • 1/2 Tsp. Salt
  • 2 C flour (sifted)
  • 2 1/2 C Sugar
  • 2 Tsp. Baking Soda
  • 2 Tsp. Cinnamon
  • 1 C Dates (chopped)
  • 1 C Vegetable Oil
  • 3 Eggs
  • 1 1/2 Tsp. Vanilla
  • 2 C Carrots (grated)
  • 2 C Pecans (chopped)
  • 2 Can (small Crushed Pineapple
  • 1 Pkg. Cream Cheese (8 oz.)
  • 1 Tsp Vanilla
  • 1 Box Powdered Sugar

Preparation

Step 1

Mix and sift all dry ingredients; add oil, eggs and vanilla. Mix again. Add carrots, nuts, pineapple and dates. Pour into large greased & floured bundt pan. Bake at 325* 1 hor 15 minutes.

Frosting: Mix all ingedients together well. Spread on cake.
(If frosting is too thick just add a little milk).
