Ingredients
- Frosting:
- 1/2 Tsp. Salt
- 2 C flour (sifted)
- 2 1/2 C Sugar
- 2 Tsp. Baking Soda
- 2 Tsp. Cinnamon
- 1 C Dates (chopped)
- 1 C Vegetable Oil
- 3 Eggs
- 1 1/2 Tsp. Vanilla
- 2 C Carrots (grated)
- 2 C Pecans (chopped)
- 2 Can (small Crushed Pineapple
- 1 Pkg. Cream Cheese (8 oz.)
- 1 Tsp Vanilla
- 1 Box Powdered Sugar

Preparation
Step 1
Mix and sift all dry ingredients; add oil, eggs and vanilla. Mix again. Add carrots, nuts, pineapple and dates. Pour into large greased & floured bundt pan. Bake at 325* 1 hor 15 minutes.
Frosting: Mix all ingedients together well. Spread on cake.
(If frosting is too thick just add a little milk).
