Salad Dressing - Green Goddess

Ingredients

  • 1 clove garlic
  • 1 large ripe Hass avacado, halved,pitted, peeled
  • 2 T. cider vinegar or fresh lemon juice
  • 2 T. peeled,seeded & grated cucumber
  • 2 T. chopped scallion
  • 1 T. chopped fresh parsley
  • 1 T. chopped fresh taragon
  • 3/4 t. salt
  • 1/4 t. freshly ground black pepper

Preparation

Step 1

Makes 1 3/4 cups

In food processor with metal blade attached,mince garlic. Add avacado and vinegar; process until fairly smooth. With motor running, drizzle in 2/3 cups water. Scrape into a bowl and stir in cucumber,scallion,parsley,tarragon,salt and pepper. Cover survace of dressing to prevent browning; refrigerate until serving, upto 1 week.
Stir before using.
