Broccoli Casserole

Ingredients

  • 10 cups broccoli florets (fresh bag from costco)
  • 1 small onion
  • 2 cans cream of mushroom soup
  • 2 eggs
  • 1 cup mayo
  • 1 cup shredded cheddar cheese
  • 1 can fried onions

Preparation

Step 1

Cook broccoli in boiling water for 3 mins or until crisp tender.
Drain and put in large baking dish sprayed with Pam.
Mix together the following ingredients:
grated onion,mayonnaise,soup, lightly beaten eggs, and cheese.
Pour mixture over the broccoli.
Cover and let sit in refig overnight.
Remove from frig 2 hours prior to cook time, to bring to room temperature.
Put 1 fried onion on top.
Bake at 350 for 40-50 minutes.
