Ingredients
- I unbaked 8 in. pie crust
- 3 eggs ■
- 6-8 Tbsp. sugar
- 3 c. milk, scalded
- 1 c. coconut
- 1/2 tsp. vanilla
- nutmeg
Preparation
Step 1
Beat eggs slightly; add sugar and salt. Stir in milk, then add flavoring and coconut. Pour immediately into pie shell. Bake 425 deg. oven 12-15 minutes until crust browns. Reduce heat to 300 deg. and bake 25-30 minutes longer, until pie is coagulated to within 1/2 in. of center. An inch of liquid area in center will finish cooking after pie is removed from oven. Remove to cake rack to cool before serving
