Chickpea Salad with Red Onion and Tomato

Ingredients

  • 1 19 ounce can chickpeas -- drained
  • 2 Tablespoons finely chopped red onion
  • 2 cloves garlic -- minced
  • 1 tomato -- diced
  • 1/2 cup chopped fresh parsley
  • 3 Tablespoons oil
  • 1 Tablespoon lemon juice
  • Salt and pepper

Preparation

Step 1

In a large bowl, combine the chickpeas, red onion, garlic, tomato, parsley, oil, lemon juice, salt and pepper. Chill for 2 hours before serving.
