Microwave Iced Pecan Brittle (Mrs. Roberts)

Ingredients

  • 1 1/2 cups pecans, finely chopped
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 tsp salt
  • 1 Tbsp butter
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 chocolate candy bars

Preparation

Step 1

In a 2 quart Pyrex bowl, combine pecans, sugar, corn syrup and salt. Microwave on high for 4 minutes. Stir well. Microwave for 3 more minutes.

Add butter and microwave for 2 1/2 minutes. Then add baking soda and vanilla. Stir rapidly until a smooth consistency. On a sprayed jelly roll pan, spread the hot mixture, stretching and pulling with a knife or large spoon until desired thinness is achieved.

While brittle is cooling, spread melted milk chocolare over entire surface (approximately 1/8" thick) and dust with chipped pecans.

Let cool and break into pieces.
