Ingredients

    lbs. ground beef

  • 1

    C diced green pepper

  • 2

    tsp minced garlic

  • 1

    C black beans, rinsed

  • 1

    C diced tomatoes

  • 1

    C frozen corn

  • 1 1/2

    tsp chili powder

  • 1

    tsp cumin

  • 2

    C pasta sauce

  • 1

    C salsa

  • 8

    whole wheat tortillas

  • 2

    C shredded ched/mozz

  • sour cream (opt)

Directions

In skillet, cook beef, pepper, and garlic until meat is brown. Break up clumps while cooking. Add black beans, tomatoes, corn, chili powder and cumin. Cook and stir for 2 minutes. Add pasta sauce and salsa. Cover and simmer for 5 minutes stirring occasionally. Spread 1/3 sauce mix over bottom of greased 13x9 glass baking pan. Top with 1/2 tortillas. Top with 1/3 sauce mix and 1/2 cheese. Top with tortillas, remaining sauce and remaining cheese. Cover with foil and bake at 375 for 35 minutes. Uncover and bake 10 more minutes. Top with sour cream if desired once served.
