Salad dressing - Ginger-Carrot

Ingredients

  • Makes 1 1/3 cups
  • 1/2 pound (about 4 med.size)carrots, peeled and sliced
  • 1 clove garlic
  • 1 (1") piece fresh giner, peeled
  • 1/3 cup fresh orange juice
  • 1/4 cup tomato juice
  • 2-3 Tbsp. cider vinegar or fresh lime or lemon juice
  • 1/2 tsp. salt

Step 1

In small saucepan, cover carrots with water. Bring to boil. Reduce heat and simmer, covered, until tender, about 15 m. Drain and let cool.
In food processor with metal blade attached, mince garlic and ginger. Add cooked carrots and process until carrots are very smooth, occasionally pausing processor to scrape sides of bowl. Add juices, vingegar and salt. Process until smooth, drizzling in water if needed if dressing is too thick. Pour into bowl and refigerate until cold, upto 1 week. Stir befor using.
