Tortilla Tamale Pie

Ingredients

  • 6 5 inch tortillas
  • 12 to 16 ounces soy meat crumbles
  • 3 green onions -- chopped
  • 1 1 ounce package taco seasoning mix
  • 1 cup warm water or more as needed
  • 1 15 ounce can corn -- drained
  • 1 pepper -- cut into 1/2 inch pieces
  • 1 3 ounce can sliced black olives
  • 1 1/2 to 2 cups grated cheeses

Preparation

Step 1

Preheat oven to 350. Spray a 10 inch deep dish plate with spray. Place tortillas in an overlapping flower petal fashion to cover plate. Edges of tortilla should extend 1/2 to 3/4 inch above rim.

Saute crumbles and onion in large skillet. Add taco seasoning and 1/2 cup water and stir until water is absorbed and mixture is slightly wet. If mixture is too dry, add small amounts of water at a time. Remove from heat.

Combine meat mixture with corn,olives, and pepper. Turn into prepared pie plate and top with cheese. Bake 25 to 30 minutes.
