Pepper & Kielbasa Soup

Ingredients

  • 1 large onion, diced
  • Olive oil (enough to cover bottom of large pot)
  • 2-3 cloves garlic, minced
  • 1 carton chicken broth
  • 1 can Progresso lentil soup
  • 1 28oz. can Diced tomatoes w/ basil, garlic, & oregano
  • 2 15.5oz. cans Goya dark kidney beans
  • 2 each red, orange, yellow, & green peppers,
  • cut into large chucks
  • 2 pkg. Kielbasa, cut into bite-sized pieces
  • 2 jalepenos, diced (remove seeds for less heat)
  • Few drops hot sauce, to taste
  • Basil, to taste
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. chili powder
  • 1/2 tsp. oregano
  • Salt & pepper to taste

Preparation

Step 1

Cover bottom of pot with oil. Brown onions and garlic, then add remain ingredients except pepper chunks. Let cook about an hour, then add pepper chunks, and cook for a remaining half hour.
