Ingredients
- 2 TBSP grated orange rind
- 3/4 c fresh orange juice
- 1/2 c fresh lime juice
- 3 TBSP honey
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp crushed red pepper
- 2 red onions cut into 4 wedges
- 4 zucchini, each halved lengthwise
- 4 yellow squash, each halved lengthwise
- 3 TBSP thinly sliced fresh basil
- Cooking spray
Preparation
Step 1
Prepare grill by oiling grates and heating to high heat.
Combine first 7 ingredients in a large zip-top plastic bag. Add onion wedges, zucchini, and yellow squash to bag. Seal and marinate in refrigerator 1 hour, turning bag occasionally.
Drain vegetables in a colander over a bowl, reserving marinade. Place vegetables on grill rack and grill for 8 minutes or until tender; turn and baste occasionally with 3/4 cup of the marinade.
Place the vegetables on a serving platter; sprinkle with the basil. Serve the vegetables with the remaining marinade.
