Ingredients
- Crust (Makes 2)
- 3 cups flour, sifted
- 1 cup oil
- 6 Tbsp sugar
- 6 Tbsp milk
- pinch salt
- Filling (Makes 2)
- 1 can pumpkin pie filling
- 1 1/2 c sugar
- 3 eggs, separated (beat whites to soft peaks)
- 1 can evaporated milk
- 1 stick melted butter
- pumpkin pie spice, to taste
Preparation
Step 1
Crust:
Mix all ingredients and press into the bottom of 2 9"pie pans.
Filling:
Mix all ingredients except egg whites in a large bowl until thoroughly mixed. Gently fold in egg whites. Pour into unbaked crusts. Bake at 350 degrees for 45 minutes or until knife inserted comes out clean.
