Greek Chicken Pasta

Ingredients

  • 3 cups uncooked penne
  • 1/4 cup butter
  • 1 large onion, chopped
  • 1/4 cup flour
  • 1 can chicken broth
  • 3 cups cubed rotisserie chicken
  • 1 jar (7 1/2 oz) marinated artichoke hearts, drained
  • 1 cup crumbled feta cheese
  • 1/2 cup sun dried tomatoes
  • 1/3 cup sliced pitted olives
  • 2 tsp minced fresh parsley

Preparation

Step 1

Cook pasta.
Melt butter in a large ovenproof skillet.
Add onion and saute until tender.
Stir in flour and gradually add chicken broth.
Bring to a boil and cook and stir for 2 minutes.
Stir in chicken, artichoke hearts, tomatoes, olives, and feta.
Drain pasta and stir into pan.
Broil 5-7 minutes.
Sprinkle with parsley
