Ingredients
- 1/2 cup sliced green onions
- 1/2 cup chopped red pepper
- 1/4 cup (1/2) stick margarine, divided
- 2 packages (10 oz. each) sweet corn, thawed, drained
- 1/2 lb. velvetta cheese spread cubed
- 2/3 cup crushed tortilla chips
- 1/2 teaspoon Mexican seasoning
- 2 tablespoons chopped cilantro
Preparation
Step 1
Cook and stir onions and red pepper in 2 tablespoons of margarine in skillet over medium high heat until tender. Reduce heat to low. Stir in corn and velvetta, cook 5-7 minutes or until velvetta is melted and mixture is thoroughly heated, stirring occasionally. Melt remaining 2 tablespoons margarine in separate pan, stir in tortilla chips and seasoning. Cook over medium heat 3 minutes, stir in cilantro. Spoon corn mixture into serving bowls, sprinkle with tortilla mixture.
