Sweet Potato Au Gratin

  • 1 1/2 c. heavy cream
  • 1/2 c. finely grated Parmesan cheese + (2 Tbsp. for topping)
  • Salt and Pepper
  • 1/2 stick unsalted butter

Step 1

Preheat oven to 350F. Peel and rinse sweet potatoes. Cut into medium thick (about ½ inch) – I cut them into uniform slices using a Cutco Cheese Knife or Chef’s Knife. In a deep casserole dish arrange a layer of sweet potatoes. Sprinkle with cheese and salt and pepper and dot with butter. Repeat layers until you have used all of the sweet potatoes, cheese and butter. Sprinkle the top of the gratin with the reserved cheese. Gently pour the cream over the top of the potatoes and along the side of the casserole dish until it is almost half way up the sliced potatoes. Sprinkle cheese over the top of potatoes and season with black pepper. Bake in hot oven for about 25 to 35 minutes until top is browned and potatoes are fork tender. Note: If the top of your gratin is browning quicker than the potatoes are cooking – cover with tinfoil until potatoes are cooked through. Be sure to rest gratin for 15 to 20 minutes before serving.
