Shrimp Creole

Ingredients

  • 1 1/2 c. chopped onion
  • 1 c. finely chopped celery
  • 2 medium green peppers, finely chopped
  • 2 cloves garlic, minced
  • 1/4 c. butter or margarine
  • 1 can (15 oz.) tomato sauce
  • 1 c. water
  • 2 tsp. minced parsley
  • 1 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 2 bay leaves,crushed
  • 14-16 oz. cleaned raw shrimp fresh/frozen
  • 3 c. hot cooked rice

Preparation

Step 1

Cook and stir onion,celery,green pepper, and garlic in butter about 5 minutes or until tender. Remove from heat, stir in tomato sauce, water and seasonings. Simmer 20 minutes. Add additional water, if needed; add shrimp. Heat mixture to boiling; cover and cook over medium heat 10-20 minutes; or until shrimp are pink and tender. Serve over hot cooked rice.
