Ingredients
- 3 tablespoons oil
- 1 cup matchstick carrot strips
- 4 cups broccoli flowerets
- 1 cup chicken broth
- 1 cup matchstick zucchini strips
- 8 ounces egg noodles, cooked and drained
- 1 teaspoon grated lemon rind

Preparation
Step 1
In skillet, heat oil over medium-high heat. Add carrots. Cook, stirring, one minute. Add broccoli. Cook, stirring, two minutes. Add broth and zucchini. Reduce heat and simmer 2 - 3 minutes or until vegetables are tender-crisp. Stir in noodles and lemon rind; toss to coat well.
