Tomatoes Vinaigrette

  • 1/3 cup water
  • 3 tablespoons cider vinegar
  • 1 tablespoon chopped red onion
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon sugar
  • 1/8 teaspoon dry mustard
  • 1/8 teaspoon paprika
  • Dash of chili powder
  • Dash of garlic powder
  • 2 medium tomatoes, cut into 1/4-inch-thick slices
  • Curly leaf lettuce leaves (optional)

Step 1

Combine first 9 ingredients in an 11- x 7-incl baking dish; stir well. Add tomato slices, turnin to coat. Cover; let stand at room temperature at least 30 minutes. Serve tomato slices on lettuce-lined salad plates, if desired.
