Mexican Rice

I love this rice. It is so good and the secret is to rinse the rice before cooking so do not skip that step! I got this recipe from Recipezaar.com but I made some changes to it so I can consider it my own.

Ingredients

  • 2 cups long grain white rice
  • 1/3 cup canola oil
  • 1 medium white onion, chopped
  • 4 minced garlic cloves
  • 2 cups chicken broth
  • 2 cups salsa
  • 1 1/2 teaspoons salt
  • 1/2 cup fresh cilantro, minced (optional)
  • 1 lime (optional)

Preparation

Step 1

1. Place rice in a fine mesh strainer and rinse under cold running water until water runs clear- about 1 1/2 minutes.Shake rice vigorously to remove excess water. IF YOU OMIT THIS STEP YOUR RICE WILL NOT BE DRY AND FLUFFY.

2. Heat oil in large non-stick saute pan over medium high heat about 2 minutes.

3. Add rice and onions and fry until rice is light golden.

4. Reduce heat to medium and add garlic.

5. Stir in broth, salsa and salt. Increase heat to medium high, and bring to a boil.

6. Cover pan and reduce heat to medium low for 30-35 minutes until rice is tender.

7. Fluff rice and top with cilantro and lime
