  • 1 cup frozen cubed has brown potatoes
  • 2 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup seeded and diced poblano chile pepper
  • 1/2 cup yellow bell pepper diced
  • 11 eggs
  • 2 tbsp minced fresh chives
  • salt and pepper
  • 2 oz cream cheese
  • 2 oz monterrey jack cheese, shredded
  • 2 tbsp fresh orange juice
  • 1 ` box frozen puff pastry, thawed
  • 1 egg beatn with 1 tbsp water
  • shreeded motnerrey jack cheese

Step 1

Preheat oven to 400. Cut parchment paper to line 2 baking sheets. SAute potatoes in oil in a large nonstick skillet over med high heat until browned, about 10 minutes. Add onion, pobalno and bell pepper. Cook until vegetables are soft, 3 minutes

Whisk together eggs and chives in a bowl. Add egg mixture to potatoes in skillet, cook, stirring constantly, until eggs are set. season mixture with salt and pepper. remove skillet from heat. stir in cream cheese, other cheese and orange juice. Stirring until cheese melts., chill egg filling while preparing puff pastry.

unfold 1 puff pastry sheet on a floured surface and roll out to a 10 x 12 inch rectangle. transfer to a sheet of prepared parchment. wth a short side toward you, cut off top corners and notch bottom to create a flap. repeat with second pastry. spoon half o the egg mixture down the center of each pastry sheet. cut 45 degree angel strips in pasty on both sides of filling. alternatley fold strips over filling. left paper and strudels onto baking sheets. brush strudels with egg wash, sprinkle iwht cheese and bake until golden 20 to 30 minutes.

THis dish tastes beytter made a day ahead. prepare and braid sturdels, then cover with plastic wrap. don't egg wash until ready to bake. spring with cheese and bake as directed.
