Almond Butter Cookies

Ingredients

  • 2 sticks (1 cup) softened butter
  • 1/2 cup sugar
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt (such as fine grey sea salt)
  • 2 cups all purpose flour
  • 1/2 cup sugar or 1/4 cup vanilla sugar plus 1/4 cup sugar for rolling
  • 1/2 to 1 teaspoon salt for rolling

Preparation

Step 1

1. Preheat the oven to 350 degrees F.
2. In a large bowl, cream together the butter and sugar until fluffy.
3. Add the almond extract, vanilla extract, and salt, and mix well.
4. Add the flour and mix just until blended. Do not over-beat.
5. Roll the dough into 1 inch balls.
6. In a small bowl, combine the sugar/vanilla sugar mixture and salt to taste.
7. Roll the balls in the sugar/salt mixture and place on parchment paper-lined baking sheets.
8. Press lightly with a glass to flatten slightly.
9. Bake at 350 degrees F. just until golden, approximately 12-15 minutes.
