Never Fail Blender Hollandaise
- 1 cup butter
- 4 large egg yolks
- 1/4 tsp salt
- 1/4 tsp granulated sugar
- 1/4 tsp hot pepper sauce
- 1/4 tsp dry mustard
- 2 tbsp fresh lemon juice
Heat butter to a full boil being careful not to brown.
Combine all other ingredients in blender.
With blender turned on high, slowly pour butter into yolk mixture in a thin stream until all is added.
Heat over hot (not boiling) water in top of double boiler whisking constantly until thickened.
Keeps well in refrigerator for several days.
Reheat over hot (not boiling) water in top of double boiler.
