Mini Spinach Artichoke Frittatas

Ingredients

  • 6 eggs
  • 3/4 cup Grated Parmesan
  • 1/4 cup Miracle whip
  • 1 Tbsp flour
  • 1 tbsp Dijon Mustard
  • 1/2 tsp ground black pepper
  • 1 can (14 oz) artichoke hearts, drained, chopped
  • 1 pkg (10 oz) frozen chopped spinach, chopped, drained
  • 3 green onions, thinly sliced
  • 1/3 cup finely chopped red pepper

Preparation

Step 1

Heat oven to 350

Whisk first 6 ingredients in large bowl until well blended. Add remaining ingredients. Mix well
Spoon 1-1/2 Tbsp spinach mixture into each of 32 mini muffin cups sprayed with cooking spray

Bake 15 to 18 min or until toothpick inserted in centre comes out clean
