Ingredients
- 1 16-ounce can pear halves
- 1 11-ounce can mandarin orange sections, drained
- 1/2 cup strawberry jelly
- 2 tablespoons lemon juice
- 1/4 cup brandy
- 4 teaspoons cornstarch
- Fresh mint sprig (optional)
- 1/4 teaspoon ground nutmeg
Preparation
Step 1
Drain pears, reserving l/2 cup syrup. Slice pears; set aside. Combine the reserved pear syrup, strawberry jelly, lemon juice, cornstarch, and ground nutmeg in blazer pan of charing dish. Cook over high heat on range, stirring constantly, till mixture is thickened and bubbly.
Place blazer pan over chafing dish burner. Add pears and oranges to sauce; simmer 5 minutes, basting fruit occasionally. Remove from heat. Pour brandy into a ladle; warm over burner. Flame and pour over fruit. Serve sauce when flame has subsided. Garnish with fresh mint, if desired. Makes 2 1/2 cups sauce.
