White Bean, Tuna & Tomato Salad

Ingredients

  • 1/3 cup green onions, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 2 cups cherry or grape tomatoes, halved
  • 1 16-oz can cannellini beans, drained & rinsed
  • 1 6-oz can albacore tuna, drained & flaked
  • 3 tablespoons minced fresh basil

Preparation

Step 1

Flake tuna into large bowl. Top tuna with lemon juice and vinegar while preparing rest of ingredients. Add onions, zest and oil. Gently fold in tomatoes and beans to combine. May prepare ahead to this point and chill. Before serving, stir in basil.
