Quinoa with Balsamic Roasted Vegetables

Ingredients

  • 3 Tablespoons oil
  • 2 cloves garlic -- minced
  • 1/2 Tablespoon brown sugar
  • 1 Tablespoon herbs de provence
  • 1 Tablespoon balsamic vinegar
  • salt and pepper
  • 1 red pepper -- cut into 1" squares
  • 1 yellow pepper -- cut into 1" squares
  • 1 onion -- cubed
  • 1 zucchini -- cut into 1/2" semicircles
  • 1 yellow squash -- cut into 1/2" semicircles
  • 1 3/4 cups chicken broth
  • 2 cups quinoa

Preparation

Step 1

Preheat oven to 400. In a large bowl, combine oil, garlic, brown sugar, herbs de provence and vinegar. Season liberally with salt and pepper. Whisk to blend. Add vegetables and toss to coat. Spread mixture onto cookie sheets and roast for 40-45 minutes.

While vegetables are roasting, prepare quinoa. Boil chicken broth and add quinoa. Reduce flame and simmer until all liquid is absorbed about 10-15 minutes.

Combine quinoa with vegetables.
