Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup vegetable shortening
  • 1 cup sugar
  • 3 large eggs, beaten
  • 1 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup pistachios, coarsely chopped
  • 3/4 cup dried cherries, coarsely chopped
  • 2.5 cups semisweet chocolate or dark chocolate, melted
  • 4 ounces white chocolate, melted (optional)
  • Garnish: chopped pistachios

Preparation

Step 1

1. Preheat oven to 350°. Line 2 baking sheets with parchment paper.

2. Beat butter and sugar at medium speed with an electric mixer until fluffy. Beat in eggs and vanilla.

3. Combine flour, sugar, baking powder and salt in a large mixing bowl. Add pistachios, 1/2 cup chocolate morsels and cherries, stirring to mix well. In a separate bowl, combine butter, eggs and vanilla. Add butter mixture to flour mixture. Stir until the dry ingredients are moistened.

4. Place half of dough on each prepared baking sheet. Shape each half into a slightly rounded log about 10 x 3 inches using floured hands. (Dough will be very sticky.)

5. Bake 25 to 30 minutes or until dough is firm to the touch. Let cool completely on baking sheet on a wire rack.

6. Transfer logs to a cutting board, and cut into 1/2- to 3/4-inch-wide slices with a serrated knife. Place slices, cut sides down, on a baking sheet. Bake 4 minutes on each side or until crisp. Transfer to wire racks to cool completely.

7. In a small microwave bowl, melt 2 cups chocolate morsels and shortening in a microwave oven on high for 30 second intervals until melted (approximately 1 1/2 minutes). Stir until smooth.Dip ends of biscotti in dark chocolate, dip into pistachios and drizzle with white chocolate, if desired. Place on wax paper to set.
