Kimpira Renkon

Ingredients

  • 7 oz renkon (lotus root)
  • 1 tbsp sesame oil
  • 3 tbsp toasted sesame seeds
  • 2 red chili peppers, finely chopped
  • 1 tbsp mirin
  • 1 tbsp soy sauce

Preparation

Step 1

Peel renkon and slice into 5 mm rounds. Soak in vinegar water for 3 minutes. Drain and pat dry.
Add sesame oil to a heated pan and stir fry renkon on high heat.
When renkon is lightly browned, add sesame seeds and chilis. Stir fry briskly.
Add mirin and soy sauce and toss to coat.
