Spicy Chicken Rigatoni

Ingredients

  • OPTIONAL:
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. minced garlic
  • 1/2 tbsp. crushed red pepper
  • 1/2 tsp. ground black pepper
  • 8 oz. chicken (pre-cooked roasted chicken is great)
  • 1 1/2 cups "red" pasta sauce (I used Garlic and Herb in jar)
  • 1 1/2 cup Alfredo sauce
  • 3/4 - 1 cup peas (frozen)
  • 1 lb Rigatoni pasta, cooked according to package directions
  • Garnish with Parmesan Cheese or Crushed Red Pepper

Preparation

Step 1

1. In a sauté pan, heat oil over medium heat. Add crushed red pepper, black pepper and garlic; sauté just long enough for garlic to caramelize and red pepper to release flavor into the oil. Add chicken and sauté briefly to coat in spices and garlic.
2. Add Marinara Sauce first and then Alfredo Sauce and bring to a simmer. Cook until sauce thickens slightly. Add peas and incorporate into sauce.
3. Toss pasta with the sauce.
4. Garnish as desired and serve.
