Ingredients

  • Ingredients:
  • 2 1/2 lbs lean beef chuck (or meat of choice) - cubed
  • 10 – 12 pearl onions sliced in half or 1 medium onion (cut into 1 inch pieces).
  • 10 – 12 small new potatoes (red or white)
  • 4 – 6 carrots – cut into 1 – inch chunks (I use whole baby carrots).
  • 2 large ribs of celery, cut into 1 – inch pieces
  • 1 rutabaga – diced
  • 2 Tbsp. Worcerstershire sauce
  • 1/4 cup + red wine
  • 3 Tbsp dark brown sugar
  • 1/2 tsp black pepper
  • 1/8 tsp allspice
  • 1/4 tsp dried marjoram
  • 1/4 tsp dried thyme
  • 2 bay leaves
  • 6 Tbsp minute tapioca
  • 28 oz can diced tomatoes
  • (I use 1 - 14 oz can roasted garlic/onion diced and 1 – 14 oz can petite diced tomatoes). Add a little diced garlic if using basic diced tomatoes.
  • 2 pouches of Trader Joes Savory Beef broth (reduced sodium liquid concentrate) mixed with 1 & 1/2 cups hot water.

Step 1

Layer all ingredients in a slow cooker. Cook on low for 10 hours.
