Ingredients

  • Ingredients:

  • lbs lean beef chuck (or meat of choice) - cubed

    – 12 pearl onions sliced in half or 1 medium onion (cut into 1 inch pieces).

    – 12 small new potatoes (red or white)

  • 4

    – 6 carrots – cut into 1 – inch chunks (I use whole baby carrots).

    large ribs of celery, cut into 1 – inch pieces

  • 1

    rutabaga – diced

  • 2

    Tbsp. Worcerstershire sauce

  • ¼

    cup + red wine

  • 3

    Tbsp dark brown sugar

  • ½

    tsp black pepper

  • tsp allspice

  • ¼

    tsp dried marjoram

  • ¼

    tsp dried thyme

  • 2

    bay leaves

  • 6

    Tbsp minute tapioca

  • 28 oz can diced tomatoes

  • (I use 1 - 14 oz can roasted garlic/onion diced and 1 – 14 oz can petite diced tomatoes). Add a little diced garlic if using basic diced tomatoes.

    pouches of Trader Joes Savory Beef broth (reduced sodium liquid concentrate) mixed with 1 & ½ cups hot water.

Directions

Layer all ingredients in a slow cooker. Cook on low for 10 hours.
