HEALTHY THANKSGIVING GREEN BEAN CASSEROLE

Ingredients

  • 2 lbs. green beans (fresh or frozen)
  • 1 medium sweet onion
  • 8 oz. mushrooms (portobello or crimini)
  • 1 & 1/4 c. panko bread crumbs
  • Shredded Parmesan cheese
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 tsp. paprika
  • 1 tsp. garlic powder
  • Salt & Pepper to taste

Preparation

Step 1

Place the oven on broil. If the green beans are frozen, thaw or defrost
Slice the mushrooms & cut in half and chop 1/3 of the onion
Lightly coat pan with olive oil, saute chopped mushrooms & onions until browned
Cut remainder of the onion in half & very thinly slice the onion
Remove sauteed mushrooms & onions, set aside. Saute onions until Browned
Boil 8 c. water in a large pot, once water is boiling, add green beans & cover, cook until tender
In a small bowl mix: Panko bread crumbs, 1 & 1/2 Tbsp. olive oil & 1/4 c Parmesan cheese
Once the onions are browned, mix them into the panko bread crumb Mixture
Transfer green beans with mushroom & onion mixture into a casserole dish
Top with panko & onion mixture, put on broil for 5-10 min., until browned and crunchy
