Ingredients
- 3/4 - 1 cup sugar
- 1/4 cup flour
- 1/2 teaspoon cinnamon
- 1/2 cup fruit juice
- 3 1/2 cups cherries (pitted)
- 1 tablespoon butter
- Red food coloring, if desired

Step 1
Heat oven to 425 degrees. Mix in a saucepan the sugar, flour, cinnamon, and fruit juice. Cook over medium heat, stirring constantly until mixture thickens and boils. If desired add red food color for brightness. Pour hot thickened liquid juice over cherries and mix lightly. Pour into pastry shell.
Dot with butter and cover with top crust with slits cut into it. Seal the crusts and flute the edges. Cover edge with 1 1/2 inch strip of aluminum foil to prevent excessive browning. Bake 35 to 45 minutes or until nicely brown and juice begins to bubble through the slits in crust.
