Stuffed Peppers

Ingredients

  • 2 large green bell peppers
  • 3/4 pound ground sirloin
  • 1/4 c. chopped onion
  • 1 tsp. dried italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp. black pepper
  • 1 c. brown rice
  • 1 c. tomato basil pasta sauce (or diced italian seasoned tomatoes)
  • 1 c. shredded part skim mozzarella

Preparation

Step 1

Cut bell peppers in half lengthwise; discard seeds and membranes. Place bell pepper halves, cut sides up, in an 11 x7 baking dish. Roast / broil in the oven until tender- 5 minutes or less. Remove from oven and set aside.

Preheat oven to 350 degrees.

Heat large non-stick skillet over med-high heat. cook beef and onion until browned. Drain, if necessary, and return to pan. Stir in dried italian seasoning, salt, black pepper, brown rice and pasta sauce (or tomatoes). Cook 1 to 2 minutes or until warm.

Fill bell pepper halves with beef mixture. Sprinkle with mozzarella cheese. Bake in oven until cheese melts.
