Ingredients
- Olive oil
- 3 cloves garlic
- 1 onion
- 1 lb. pork neck bones
- 3 large cans crushed tomatoes
- Red wine of choice to taste
- Italian seasoning to taste
- Salt to taste
- Pepper to taste
- Sugar to taste
- Crushed red hot pepper flakes to taste
- 3 bay leaves
- Water as needed

Preparation
Step 1
Heat garlic in olive oil.
Add diced onion and cook until brown.
Add pork neck boned, increase heat to high and brown on all sides.
Add remaining ingredients, adjusting amounts to taste.
Reduce heat to simmer for 3-4 hours.
Add additional water as sauce cooks off.
Sauce is best if made 1-2 days prior to meal.
