Dilled Salmon with Couscous and Peas

Ingredients
- Cooking Spray
- 4 6oz. skinless salmon filets
- 1 tbsp plus 1/4 tsp. chopped fresh dill, divided
- 1/4 tsp salt
- 3/4 c. fat free, less sodium chicken broth
- 2/3 c. frozen petite green peas
- 2/3 c. uncooked whole wheat couscous
- Lemon wedges

Preparation
Step 1
Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray.
Sprinkle salmon with 1 tbsp. dill and salt. Add fish to hot pan. Cook 4 min. on each side.
Add broth to pan; bring to a boil. Push salmon filets to edge of pan. Add peas, couscous, remaining 1.5 tsp. dill; stir well. Cover; remove from heat, and let stand 5 minutes or until liquid is absorbed. Spoon couscous mixture evenly onto serving plates; top with salmon, and serve with lemon wedges.
