Beef Enchiladas

Ingredients

  • 1 lb ground beef
  • 1 16oz can refried beans
  • 1 19oz can enchilada sauce (divided)
  • 1 pkg taco seasoning
  • 1 cup diced tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 10 - 12 8-in flour tortillas

Preparation

Step 1

Preheat oven to 350 degrees.

In a large skillet cook beef until no longer pink; drain.

Add taco seasoning, refried beans, 1/2 cup of enchilada sauce, 1 cup of cheddar cheese, 1 cup of mozzarella cheese, and tomatoes. Mix well.

Butter a 9x13 baking dish. Spoon mixture into tortillas and roll them and place them in pan, fold down. Adjust them to fit them all in the pan.

Pour remaining enchilada sauce over the enchiladas and sprinkle with remaining cheese. Bake for 20 minutes.
