Butternut Squash, Apple & Gorgonzola Gratin

Ingredients

  • 2 1/2 tbsp basting oil
  • 1 pkg cleaned and cut butternut squash- sliced into 1/8" thick pieces
  • Salt & pepper to taste
  • 1/8 tsp. nutmeg
  • 1 1/2 cup heavy cream
  • 2 med. Granny Smith apples, cored,peeled, thinly sliced(about 2 1/2 cups)
  • 3 oz. gorgonzola cheese

Step 1

Note: you will need 2-quart casserole dish & baking sheet
Preheat oven to 350 degrees

Rub casserole dish w/ 1/2 tablespoon of oil. Place casserole dish on baking sheet. Cover bottom of casserole dish w/ layer of squash: season w/ salt & pepper and 1/2 of nutmeg. Repeat w/ remaining squash; season w/ salt & pepper and remaining nutmeg. Pour heavy cream all over squash.

Bake 30 m. - remove from. Press squash/cream mixture down using spatual. Return to oven - bake 10 m.; remove from oven.

Toss apples w/ 1 tablespoon of basting oil in samll bowl. Cover top of squash w/ mixture w/ single layers of apples slices; overlapping slightly and pressing apple slices gently into creamy mixure w/ a spatuala

Return casserole to oven, bake 45-50 m. or unitl squash and appples are tender. Remove from oven. Top w/ dollops of gorgonzola cheese. Allow cheese to melt before serving.
