Mexican Chicken Bake

Ingredients

  • Box of cornbread
  • 2 can Rotel
  • 1 onion
  • 1 lb. cooked shredded chicken
  • 1 cup frozen corn
  • 1 pkg. fajita seasoning
  • 1 pkg. mexican cheese

Preparation

Step 1

Saute onions and rotel in one pan. Place cooked chicken and fajita seasoning according to package in another pan. Once cooked combine everything together and cook for 3 min.
Prepare cornbread according to package.
Place chicken in 8" square pan and layer in cheese. Spread cornbread mixture over top.
Bake at 400 degrees for 30 min. Spread more cheese ontop and bake for additional 5 min.
